Here’s a fantastic recipe for Malva Pudding – a good old South African favourite – from deep in the wilderness. It’s the recipe used at Garonga Safari Lodge in Makalali, Limpopo, where the meals are out of this world.

Malva Pudding Ingredients:

•250ml flour
•45ml apricot jam
•100ml sugar
•20 ml vinegar
•1 egg
•125ml milk
•30g butter
•5 ml bicarbonate of soda
•1ml salt
Sauce

•150ml cream
•60g butter
•100ml sugar
•15ml apricot jam

Malva Pudding Method:

Mix all the ingredients together in a cake mixer. Butter or oil the pan you wish to bake it in, pour into the tin and place in a preheated oven (180˚C) until ready – test it with a skewer until its cooked all the way through. Boil the sauce ingredients together and ladel over the cake.
